Zucchini Egg Bake


5 medium zucchini, peeled and chopped
1 large onion, chopped
1/4 cup butter or margarine
24 eggs
1 cup grated Romano cheese
2 tablespoons parsley
2 teaspoons basil
2 teaspoons marjoram
1/2 teaspoon garlic powder
1/2 teaspoon salt
2 cups mozzarella cheese

In a large skillet saute the zucchini and onion in butter.until tender. In a large bowl whisk the eggs, Romano cheese, parsley, basil, marjoram, garlic powder and salt. Stir in vegetable mixture and mozzarella cheese. 

Pour into greased 9x13 pan and bake at 350 for 40 - 45 minutes or until knife inserted in center comes out clean.

Note: The cheeses in this recipe can be changed to suit your taste. I used what I had on hand but Parmesan cheese instead of Romano or cheddar or pepper jack cheese instead of the mozzarella would also be good.
