I baked this yummy cake earlier this week and it did not stay around very long. I like all the fruit it has in it.
3 cups flour
2 cups sugar (I think next time I'm going to try reducing the sugar to 1 1/2 cups)
1 tsp. baking soda
1 tsp. salt
3 large eggs, beaten
1/2 cup vegetable oil
1 1/2 tsp. vanilla
1/2 cup applesauce
1 6 oz can crushed pineapple (3/4 cup)
2 cups bananas
Mix flour, sugar, baking soda, salt and cinnamon together. Stir. Do not beat with a mixer. In seperate bowl mix eggs, vegetable oil, vanilla, applesauce, pineapple and bananas together. Mix the dry ingeredients with the wet mixture and pour into a well-greased and floured 13"x9" baking pan. Bake in preheated oven at 350 degrees for 25-30 minutes.

ReplyDeleteI can't find crushed pineapple in my local supermarkets any more. I have to buy a can of chunks or rings and whiz them up in the food processor.
