I needed something simple to fix for lunch yesterday. It needed to be something that I could put together fairly quickly and walk away from. I thought I had a plan but discovered I didn't have a few of the ingredients I needed. I looked at the recipe I had planned for, looked at the ingredients I had on hand and came up with this instead.
3 cups dry macaroni, cooked and drained
2 12.5 ounce cans chunk chicken breast, undrained
2 16 oz.jars classic alfredo sauce
1 onion finely chopped
2 cups mozzarella cheese
1 cup milk
salt and pepper to taste
Mix all the ingredients and bake at 350F for one hour.
I have no pictures of the finished product because the hungry hoard descended upon it and quickly devoured it. Or something like that.
In other words - the kids loved it.

ReplyDeleteThat sounds quick and easy! I made something similar with regular pasta sauce, but I never thought of substituting with alfredo! I'm going to have to to remember to pick some up next time I'm at the grocery store and give this a try.
