Creamy Cucumber Salad


Our one cucumber vine is producing very well and today I picked eight cucumbers. So for dinner this evening I made this yummy Creamy Cucumber Salad. It was delicious so I thought I would share the recipe.

6 - 8 cucumbers, thinly sliced
1 onion, thinly sliced
1 cup mayonnaise
1/4 cup vinegar
2 teaspoons sugar
1 teaspoon dried parsley flakes
1 teaspoon salt
1 teaspoon dried dill weed
1/4 teaspoon pepper
1/4 teaspoon garlic salt
2 drops hot pepper sauce

Combine cucumbers and onions in a large bowl. Combine all remaining ingredients; pour over cucumber mixture and mix well. Refrigerate for several hours before serving

  4. Looks really yummy! My favorite is gazpacho when you have a lot of tomatoes, onions, and cucs. I just coarsely chop them and blend half in the blender with salt, pepper, parsley. I drink it in a glass when I am alone but for meals I put it in bowls and serve cold soup on hot days. Thanks for sharing. Vickie
