Sweet Potato Bread

Several weeks ago someone from church gave me quite a few sweet potatoes. I decided to cook and mash them and put them in the freezer until I decided what I wanted to do with them. 

I was really happy with how easy it was to freeze them. I simply diced and cooked them and then mashed them in the kitchenaid mixer. After they had cooled I put them in containers and put them in the freezer. Easy peasy!

Yesterday it was rainy all day and we couldn't spend any time outside  so I decided to do some baking. One of the things I decided to bake was Sweet Potato Bread. This is similar in taste to pumpkin bread but the sweet potatoes give their own unique flavor to it. This was the first time I'd made this but I'll definitely be making it again.


Sweet Potato Bread
(adapted from this recipe by Mary E. Crain at allrecipes)

2 1/2 cups white sugar
3/4 cup vegetable oil
4 eggs
2/3 cup water
3 1/2 cups white flour
2 teaspoons baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
2 cups cooked, mashed sweet potatoes 

Combine sugar and oil and beat well. Add and eggs and water and beat. Combine flour, baking soda, salt, cinnamon and nutmeg. Mix dry ingredients into wet ingredients. 

Pour into two greased bread pans and bake at 350 degrees F or until done.

  3. My mom used to make sweet potato pie in place of pumpkin pie but I haven't heard of sweet potato bread in place of pumpkin bread. Why not!? That's a great idea. I will have to Add this to my list of fall recipes. Thank you for sharing!
