4 cups all purpose flour
6 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon cinnamon
1/2 cup white sugar
1/4 cup shortening
1/4 cup applesauce
2 cups milk
2 cups apples - peeled, cored and chopped
1. Preheat oven to 400 degrees F (200 degrees C). Lightly grease 12 muffin cups or spray cupcake liners with cooking spray.
2. In a large bowl, sift together the flour, baking powder, salt and cinnamon.
3. In a separate bowl, mix together sugar, shortening and applesauce. Stir the flour mixture into the sugar mixture alternately with the milk. Fold in the apples. Pour batter into prepared muffin pans.
4. Bake in preheated oven for 20 to 25 minutes, until a toothpick inserted into the center of a muffin come out clean.

Mmmm...these sure look good. I'll be eager to try them. I had an apple one I liked but lost it. This looks a lot like it except you put a "dollop" of cream cheese in the top middle.
