Last year this container on my front porch was filled with colorful Impatiens, but this year I decided to try my hand at growing something edible in it instead. Cress seemed like a good option so I had Austin plant some.
It has been very easy to grow. Simply plant and water and let nature do it's work. Cress is a good Spring and Fall crop and prefers light shade during hotter weather. It can also be grown indoors on a sunny windowsill.
So far we've used it only in salads but I'm finding there are a number of other ways to use it as well.
I also checked out the nutritional information on Cress and here is some of what I found. Cress is high in phytonutrients as well as Vitamin C and Vitamin A. In fact, a website called Precise Portions states that it contains more vitamin C than oranges and more Vitamin A than broccoli. And there is a recipe there for Cress Soup that looks interesting.
Here are a few other recipes that I've found that I'd like to experiment with.
Cress Recipes - There are five recipes on this page including Macaroni and Cheese with Tomatoes and Cress, Peas in Cheese Sauce, and Mediterranean Mixed Salad.
