Words to Live By
1 Chronicles 16:8-11
Give praise to the Lord, proclaim His name;
make known among the nations what he has done,
Sing to Him, sing praise to Him;
tell of all His wonderful acts.
Glory in His holy name;
Let the hearts of those who seek the Lord rejoice,
Look to the Lord and His strength;
Seek His face always.
We Are Learning
We did our usual morning PreK/K routine today - 3 short videos covering Bible, Math and Phonics and then their choice of worksheets and coloring pages.
Austin and Amanda both learned about Immune Systems in Science and Austin had a grammar lesson on Participial Phrases and Participles as Adjectives. Amanda was scheduled for the same grammar lesson and they both had math in their schedules but somehow they got crowded out of their day. Amanda will make up the grammar lesson tomorrow so they both stay at the same place in Grammar and with Math we'll just pick up where we left off.
CJ had a good day at school and did well on his practice spelling test that he had for homework this evening.
In the Kitchen
Both Austin and Amanda had cooking projects this morning.
Austin made bread for the first time and I was very proud of him and the effort he put into it. His two loaves of bread turned out very well. He used the recipe below.
Homemade White Bread Recipe
2 (.25 ounce) or 5 teaspoons active dry yeast
3 Tablespoons white sugar
2 1/2 cups warm water
3 Tablespoons vegetable oil
1 Tablespoon salt
7 - 8 cups flour
In a large bowl dissolve yeast and sugar in warm water. Mix in vegetable oil, salt and two cups of flour. Mix in remaining flour, 1/2 cup at a time, mixing well after each addition. When the dough has pulled together knead for about 8 minutes or until smooth and elastic. (I use my Kitchen Aid mixer and allow the dough hooks to do this work for me.)
Lightly oil a large bowl, place the dough in the bowl and turn to coat with the oil. Cover with a damp cloth and let rise in a warm place until doubled in size. (About one hour although this varies.)
Deflate the dough and turn it out onto a lightly floured surface. Divide the dough into two equal pieces and form into loaves. Place the loaves into two greased 9x5 inch loaf pans. Cover the loaves with a damp cloth and let rise until doubled in volume. (About 40 minutes although, again, this varies.)
Preheat oven to 425 degrees F.
Reduce heat to 375 degrees F and bake for about 30 minutes or until top is golden brown and loaf sounds hollow when tapped.
Amanda made Baked Tortilla Chips. The kids have been snacking on them all day. She said they were fun to make.
Baked Tortilla Chips
1 (27.5 ounce) bag 6 inch corn tortillas
2 tablespoons vegetable oil
6 tablespoons lime juice
2 teaspoons ground cumin
2 teaspoons chili powder
2 teaspoons salt
Preheat oven to 350 degrees F.
Cut tortillas into quarters and arrange in a single layer on cookie sheets.
Mix vegetable oil and lime juice and brush liberally onto tortilla wedges.
Combine the cumin, chili powder and salt in a small bowl and sprinkle on the tortilla wedges.
Bake for about 7 minutes, then rotate the pan and bake for another 8 minutes or until the chips are crisp. Serve with salsas, garnishes or guacamole.
We Are Going
This afternoon we took Lauren to preschool and then had to go the grocery store for a few things and also to the post office.
This evening was church - dinner at church at 5:00, Family Works at 6:15, and (for me) choir practice at 7:30. Doug and I were both teachers in Family Works. While Doug was teaching I took a couple photos. He had a fun object lesson for the kids and they seemed to be enjoying it.
Just For Fun
Just a few photos I took while the kids were playing today.
