Lazy Day, Homemade Pizza and Grocery Shopping - The Walnut Acre Daily Saturday August 10, 2013

WORKING, LEARNING AND PLAYING TOGETHER

We had such a blissfully lazy day today. Michael fell asleep this afternoon, which is unusual so I took a nap too. While were napping Doug ran a call with the rescue squad. Austin was working on an art project and Amanda slept too. 

We did go grocery shopping this evening. It was time to restock since today is our last day of vacation and the kids will be back Monday. One may be back tomorrow. 

IN THE KITCHEN


I made pizza for lunch. For the crust I used crescent roll dough. I topped on pizza with cheese, sausage, onions and spinach and the other with cheese, pepperoni and bacon.

WORKING, LEARNING AND PLAYING TOGETHER

The last couple days have been quiet. Michael has been spending a lot of time with Doug while he works in outside and in the garage. 


IN THE KITCHEN



I made these Whole Wheat Blueberry Pancakes and they were very good. I love the fact that they are whole wheat. 

I also made Pepperoni Pasta Salad and used tomatoes from our garden. The garden has been a bit of a disappointment for me this year. I think I bit off more than I could chew, planted to much and it got away from me. But I was happy to pick these tomatoes even though they aren't all that pretty. They tasted good in the pasta salad. 


Michael decided he was hungry for pizza so he made himself some - with bread, butter, cheese and pepperoni. I put them in the oven for him and he ate them both.

Cauliflower Crust Pizza

We tried something recently that some of my family had serious doubts about ended up (for the most part) really liking. It's definitely going to be making a reappearance at our table. That something is Cauliflower Pizza Crust.

I've seen several different versions of this but here is how I made it.

2 cups cooked, mashed cauliflower (I just mashed it with a fork)
2 cups grated cheddar cheese
2 eggs
salt to taste
2 teaspoons oregano
2 teaspoons parsley

Mix first four ingredients together and spread on a large, greased pizza pan. Sprinkle with oregano and parsley. Bake at 450 degrees F for 15 - 20 minutes or until crust is lightly browned. 

Remove from oven and top with sauce, cheese and other toppings. Return to oven and bake until cheese has melted. 


This crust was a little softer than some pizza crusts and we ate some of our pizza with our forks. But the texture and flavor were wonderful!

Randomness

Warning - This post is full of randomness.

The beginning of January I posted that my one main goal for this year is to consistently get up at 5:30 each morning. The first couple weeks I really struggled but last week and so far this week I've actually gotten up at 5:00. Some mornings, after having coffee with Doug I have gone back to bed for a little if I was up a lot the night before, whether because of late night daycare kids or Michael's restlessness, but . . . I did get up. And it is making a difference in how smoothly the day goes.

Sunday evening CJ made us pizza and salad for dinner. He's really proud that he gets to cook two evenings and week and a takes his job seriously. He did a good job and the food was delicious.



Michael's physical therapist gave him the job of learning to walk up and down the steps alternating one foot per step. To do this she suggested we assign each foot a color and then place those same colors on the steps where he should place his feet. He enjoys practicing this and asks to do it.




Today Michael had an appointment with Audiology for a hearing test. He does have some hearing loss because the eardrum is not vibrating the way it should. However, that may just be from fluid behind the eardrum. We have an appointment set up to see and ENT to decide what we need to do next. Tubes in his ears are one possibility.

It was nice to see the sun today and to have some warmer weather with highs in the upper 50s. The kids played outside for nearly two hours - an hour this morning and an hour this afternoon. The kids needed the outside time after the cold and rainy days we've had recently and so did I.

While we were out this afternoon Doug and I started looking at the cistern that is built next too the garage. We'd like use it to collect water to water the garden this summer. With a little work I think it could be a real asset to our little corner. It's 11 feet deep and 6x7 feet across. It's already set up to collect the water from the roof of the garage. We do need to put in a pump if we're going to use it to water the garden but Doug has a pump we can use. Looks like we have another little project.





And now, I think this is enough rambling for one evening. Time for me to do some reading before I go to bed so I can get up again at 5:00 tomorrow morning.

A Few Good Things From Today

Here are a few good things from my day so far . . .

. . . cucumbers and zucchini from the garden . . .


. . . the toad we found in the garden who is helping to keep the bugs away from the plants . . .


. . . the kids enjoying one of our pet turtles . . .





. . . and Michael helping me make pizza for lunch.



And that was just the first half of the day!

Preschoolers and Pizza

This morning I needed to make pizza for lunch. I also needed to supervise four preschoolers who were feeling very energetic. So I asked for some help from them. And they did a wonderful job of making some delicious pizza for our lunch.

We started with prebaked pizza crusts, spooned on some pizza sauce and then added cheese.



Next, we added pepperoni.



Don't these look delicious?



All we had to do was pop them in the oven for about ten minutes, add a salad, and we had lunch.
