Shrimp Fried Rice - Take 2

Several weeks ago I posted a recipe for Shrimp Fried Rice. It was good but I thought it could be better. So I readjusted some of the ingredients and added another ingredient, and my family loves it!

So here is the recipe for Shrimp Fried Rice (Take 2)

4 cups water
2 cups uncooked white rice
2 eggs
3 tablespoons cooking oil
1 onion, diced
3 celery, diced
2 pounds cooked salad shrimp
3 carrots, diced
3/4 cup frozen peas
1 teaspoon soy sauce
salt to taste
black pepper to taste
soul food seasoning to taste

In a medium saucepan bring water to a boil. Add the white reice. Return to a boil, reduce heat to low, cover, and simmer for about 20 minutes, or until rice is tender.

In a small skillet scramble the eggs in a small amount of oil.

In a large skillet, brown onion and celery in remaining oil.  Add shrimp and carrots, onion, celery, and peas. Add white rice and seasonings and stir well. Add soy sauce and eggs, stir thoroughly until heated through.
