Pumpkin Chocolate Chip Cake

I've seen several versions of this cake recently and love how simple it is to put together. So I took what I liked from several different recipes and made it my own.

1 (18.25 ounce) yellow cake mix
1 (15 ounce) can pumpkin puree
1 teaspoon cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1 cup chocolate chips

Preheat oven to 350 degrees F. Grease a 9 x 13 in. pan.

In a large bowl mix together cake mix, pumpkin puree, cinnamon, nutmeg and cloves until smooth. Stir in chocolate chips.

Bake for 25 - 30 minutes in preheated oven, until toothpick inserted in center comes out clean.

Let cool. Frost if desired.


Since it is a very simple recipe I had the kids help me make it.  We had fun each taking a sniff of the spices and seeing if we liked how the smelled. I liked them all, the kids weren't so sure.

I didn't have a chance to take pictures while they were putting in the ingredients but was able to get some while they stirred.





And after everything was thoroughly stirred in, there is, of course, the fun of licking the spoons. Since there is no egg in this recipe I was happy to let them enjoy this.



A couple pictures of the finished cake. This cake was all gone (except for the piece I put in Doug's lunch for the next day) by that evening. I used Butter Frosting to add the finishing touch to this cake.

Green Tomato Cake

As we're beginning to clear out our garden, hopefully to do a little fall planting, I found myself with quite a few green tomatoes on hand. I've really never cooked with green tomatoes before so I wasn't sure what to expect. I found a version of this recipe, tweaked it suit my fancy, and gave it a try. Too my surprise, it was declared a keeper so I thought I would share the recipe here.


4 cups chopped tomatoes
1 Tablespoon salt
1/4 cup butter
1/3 cup applesauce
2 cups white sugar
2 eggs
2 cups all-purpose flour
1 teaspoon ground cinnamon
1 teaspoon nutmeg
1 teaspoon baking soda
1/4 teaspoon salt

1. Place chopped tomatoes in a bowl and sprinkle with 1 tablespoon salt. Let stand 10 minutes. Place in a colander, rinse with cold water and drain.

2. Preheat oven to 350 degrees F. Grease and flour a 9x13 baking pan.

3. Cream butter, sugar and applesauce. Add eggs and beat until creamy.

4. Add dry ingredients to creamed mixture. Dough will be stiff. Mix well.

5. Add drained tomatoes and mix well. Pour into the prepared 9x13 inch pan.

6. Bake for 40 to 45 minutes in the preheated oven, or until toothpick comes out clean.

Pineapple Banana Cake


I baked this yummy cake earlier this week and it did not stay around very long. I like all the fruit it has in it.

3 cups flour
2 cups sugar (I think next time I'm going to try reducing the sugar to 1 1/2 cups)
1 tsp. baking soda
1 tsp. salt
3 large eggs, beaten
1/2 cup vegetable oil
1 1/2 tsp. vanilla
1/2 cup applesauce
1 6 oz can crushed pineapple (3/4 cup)
2 cups bananas

Mix flour, sugar, baking soda, salt and cinnamon together. Stir. Do not beat with a mixer. In seperate bowl mix eggs, vegetable oil, vanilla, applesauce, pineapple and bananas together. Mix the dry ingeredients with the wet mixture and pour into a well-greased and floured 13"x9" baking pan. Bake in preheated oven at 350 degrees for 25-30 minutes.
