The Simple Woman's Daybook - Friday March 23, 2012
For Today
Outside my window . . . me. I'm sitting outside as I type this. It is sunny and 78 degrees.
I am thinking . . . that I really like this weather. I'm sitting in the sunshine trying to soak up lots of Vitamin D.
I am thankful . . . that all the kids are playing so happily together.
In the kitchen . . . chicken baking in the oven for dinner. Amanda is making macaroni and cheese and cooking some corn for dinner as well.
I am wearing . . . pink shirt, dark blue pants, and white socks.
I am going . . . I feel like I've been going all day and I'm ready to stay home now. This morning I took Lauren to preschool, went to the grocery store, the laundromat, the pharmacy, the bank, back to the laundromat, home, back to get Lauren, back home and then took Austin to church to meet the youth group for their weekend trip.
I am wondering . . . If Austin is having fun. He left around 1:00 this afternoon on a youth trip. For some reason I was thinking they were leaving at 6:00 this evening. So I was in a bit of a panic when the youth leader called at 12:24 and said they were waiting for Austin. From the time I got his call to the time I pulled out of the driveway was 14 minutes. In that time I hurried the kids up from the creek, told Austin what was going on, and helped him throw his things together. Amanda got the little kids in the van and buckled for me. Thankfully we live within ten minutes of the church.
I am hoping . . . to get to go to the thrift store this weekend.
I am looking forward to . . . the weekend.
We are learning . . . Michael finished the shapes section of his workbook yesterday and today we started with patterns.
Around the house . . . Doug is mowing, Amanda is cooking, CJ, Michael, Destiny, Landon and Kaleb are playing out here in the yard awith me.
A favorite quote for today . . . Maybe we should develop a Crayola bomb as our next secret weapon. A happiness weapon. A beauty bomb. And every time a crisis developed, we would launch one. It would explode high in the air - explode softly - and send thousands, millions, of little parachutes into the air. Floating down to earth - boxes of Crayolas. And we wouldn't go cheap, either - not little boxes of eight. Boxes of sixty-four, with the sharpener built right in. With silver and gold and copper, magenta and peach and lime, amber and umber and all the rest. A few plans for the rest of the week . . . go with Amanda to the SPCA to volunteer, gardening, and I'm really not sure yet what else.

Dandelion Bread - You Have to Try This, It's Scrumptious!
As I've mentioned several times recently, I've been planning to make some dandelion bread from the abundance of dandelions we always have in our yard and in the field behind the house. Well, we finally to got to try it.
I had plenty of help picking the dandelions. They look so serious in this first photo, like they are on a very important mission.
Here is our harvest.
I took these in and pulled of the stems and leaves and then washed them. I then meaured them and there were about three cups of flowers.
Then I cut the bottom off each flower so that I was left with mostly the yellow part. I didn't worry about it if a little green got in with the flower, I just didn't want those large green parts mixed in. This left me with almost two cups of flowers petals.
After lunch the kids helped mix up the batter for dandelion bread.

Absolutely delicious warm from the oven with butter and honey! I also had some toasted this morning and it was yummy that way too.
And now here's the recipe.
4 cups flour
4 teaspoons baking powder
1 teaspoon salt
1 1/2 - 2 cups dandelion petals
1/2 cup vegetable oil
3/4 cup honey
2 eggs
2 2/3 cups milk
Preheat oven to 400 degrees F. Combine dry ingredients, including dandelion petals, in large bowl. In seperate bowl mix milk, beaten eggs, honey and vegetable oil. Add to dry ingredients and mix well. Pour batter into two greased bread pans. Bake for 20 - 25 minutes. Check for doneness. If not quite done lower temperature to 350 and continue baking, checking every five minutes.

The Simple Woman's Daybook - Thursday March 22, 2012
For Today
Outside my window . . . 67 degrees and dark. According to the forecast the temperature will be going up into the low 80s tomorrow. In the garden the peas, lettuce and radishes are loving this warm weather. None of the carrots I've planted have come up yet though.
I am thinking . . . about the interesting evening we had learning about the significance of the various portions of the Passover meal. My church hosted a Passover meal this evening that was led by a Messianic Jew. I had hoped to get a lot of pictures so that I could show it in detail but wasn't able to. It did inspire me to do a little more research and maybe have one here at home with the kids next year.
I am thankful . . . for a wonderful church family.
In the kitchen . . . the kids and I made two loaves of Dandelion Bread today. It was delicious and one loaf is already gone. I loved it warm from the oven with butter and honey! I'll be writing about it and posting the recipe tomorrow.
I am going . . . to bed soon.
I am hoping . . . that Austin has a good weekend. He is going with the church youth group to Acquire the Fire and will be gone from Friday evening to Sunday afternoon.
I am looking forward to . . . Sunday. Doug and I will become members of the church we have been attending and that has become such an important part of our lives.
We are learning . . . Michael read his first book today. I think I was more excited than he was. I was so proud of him sounding out the words and really truly reading.
We looked at spider webs this morning when we were out for our walk. At first the kids were really squeamish about them. But after we looked closely at them and talked about them they weren't so bad after all. Lauren and Khristian even got up the nerve to reach out and touch them a little but Michael wasn't willing to go quite that far.
Around the house . . . It is calm and quiet.
I am pondering . . . The Full Armor of God.

A peek into my day . . . Amanda found this little tree frog in our mudroom when she was cleaning today. She showed it to the kids and then turned it loose beside the house.

Morning Musing Over Coffee - The Full Armor of God

Finally, be strong in the Lord and in his mighty power. Put on the full armor of God, so that you can take your stand against the devil’s schemes.” Ephesians 6:10-11 NIV
Satan is real. He does attack and he's good at what he does.
But the Christian is not defenseless. In fact the Christian is provided with a full armor, completely protected against any evil attacks. But this armor is useless unless it is worn. Verses 14-17 of this chapter list the various pieces of this armor - the belt of truth, the breastplace of righteousness, feet fitted with readiness, the shield of faith, the helmet of Salvation, and the sword of the Spirit.
Satan is real, but God is real too, and His power and protection is far beyond anything that Satan can throw at us. We simply need to be fitted with God's holy armor and rely on the strength He so richly supplies. There is no need for fear because we already know Jesus won the battle.

The Simple Woman's Daybook - Wednesday March 21,2012
For Today
Outside my window . . . it is dark and 63 degrees. Here are a few pictures from our morning walk. It was just Michael and me today.
I am thinking . . . that life is good.
I am thankful . . . that God is always faithful.
In the kitchen . . . I made a batch of homemade hot pockets today. They are disappearing fast!
I am going . . . I went to church this evening. I went late because a few kids stayed late so I missed dinner and the worship service, but I got there in time to teach my class and for choir practice.
I am wondering . . . if I would like dandelion tea. I think I'm going to try making some tomorrow when we make our dandelion bread.
I am looking forward to . . . the Passover meal at church tomorrow evening. There will a Messianic Jew there who will explain the significance of each item as we partake of the meal. Our pastor called us today and asked if Doug and I would be the heads of our table. I'm not sure exactly what is involved but I'm looking forward to the learning experience. I'm hoping to be able to get some photos and share more about it later.

Vitamin D Deficiency - Causes, Sypmtoms, Risks and Treatment
Overview
Vitamin D is important because it helps the body use calcium from the diet. Traditionally, a lack of Vitamin D has been associated with rickets, a disease that causes soft bones and skeletal deformities. However researchers are finding that there are other health risks related to a lack of Vitamin D as well.
Benefits of Vitamin D
There are a number of reasons that it is important to have an adequate level of vitamin D in the body.
One is that vitamin D is important to help the body absorb enough calcium and phosphorus from the diet. Most of us are aware of how important calcium is to our bodies for healthy bones. But, personally, I had not realized how important phosphorus also is. Phosphorus is also important for healthy bones and joints, for cell growth and repair, and for proper energy levels. It also helps maintain heart regularity, protect the body from cancer, and helps metabolize fats and starches. So a deficiency in vitamin D, could also lead to a deficiency in phosphorus and calcium, causing even more problems.
Symptoms and Risks of Vitamin D Deficiency
Some of the symptoms of low vitamin d levels are joint and bone pain, muscle cramps and weakness, tingling, dental deformities, weakness, fatigue, depression and anxiety. Vitamin D deficiency also increases the risk of cancer and auto-immune disorders.
Causes of Vitamin D Deficiency
There are a number of reasons vitamin D levels can be low.
One reason is too little time spent in sunlight. Sunlight is an important source of vitamin D. And even if there is plenty of sun exposure, using sunscreen limits the amount of Vitamin D the skin can produce.
A strict vegan diet can also contribute to low levels of Vitamin D since most Vitamin D is found in animal based foods including fish and fish oils, cheese and egg yolks.
Sometimes there are medical reasons the body does not produce enough Vitamin D. Crohn's disease, cystic fibrosis, and Celiac disease interfere with the body's ability to absorb Vitamin D.
Treatment
If Vitamin D levels are low a doctor may prescribe prescription strength vitamin D for eight to twelve weeks and then check again to see if it has brought the level up where it needs to be. Vitamin D injections are also available.

I did this research on this subject because I was recently diagnosed with low vitamin D. After I told my doctor about my increasingly worse muscle pain, bone and joint pain, dizziness, and fatigue she ordered a number of blood tests including the test for vitamin D. Some of the other things she was also looking at were Lupus, Multiple Sclerosis, Diabetes, and Rhuematoid Arthritis. However all my tests came back absolutely normal except for the vitamin D. I am amazed at how bad one can feel from low levels of this vitamin. There were days I just wanted to sit down and cry because everything hurt so bad but I didn't look sick, no fever, no redness or swelling, just pain. I almost wondered if it was just all in my head, and yet I knew it wasn't. I just started on the high dosage of vitamin D and I'm looking forward to feeling better.

Morning Musing Over Coffee - Like A Tree Planted By the Water

Become.com - A Smart Way to Shop Online
I am not a fan of shopping in stores, especially since I always seem to have at least one kid, usually more, with me. More and more recently I have begun to shop online.
Become.com is one site that provides a wide variety of products and brands, allows you to compare prices, and then choose the best value for you.
For example, if I decide that I want a new rug in the playroom (it really needs one!) I can simply type in 8x8 square rugs (or whatever size I want), compare prices and styles and make my decision.
My husband has long been an online shopper and I can imagine some of his choices being a craftsman 21032 4 cycle trimmer or a barbecue grill light. He has the privilege of doing all the lawn trimming and grilling here at Walnut Acre.
