Big Biscuit

A couple weeks ago I was trying to make biscuits for lunch. I was using biscuit mix and only had enough to make one recipe of biscuits. I'm used to making a double batch so without thinking I doubled the milk. I didn't want to throw it out so I decided to add enough flour to thicken it and see what happened. But the flour didn't give me the consistency I needed to form biscuits so I tried another experiment. I put all the dough into a big round baking dish and baked it as one big biscuit.


While it was still warm Amanda spread butter over the top of it.


The flavor was good although the texture was more dense than a regular biscuit. The kids loved it and have been asking me to make it again.

Bacon Cheddar Snacks






1 cup shredded cheddar cheese
1/3 cup butter or margarine, softened
1 teaspoon dried parsley
8 slices bacon, cooked and diced
black pepper, to taste
6 hamburger buns or 12 slices bread

Mix first five ingredients together, spread over buns or bread. bake at 400 degrees F for 6-8 minutes or until cheese is melted.

Garden Update - Getting Ready for Fall Planting

This is the very weedy state of our garden at the moment. We are pulling up the bean plants and harvesting the last of the beans from them. My plan is to plant fall crops as soon as we get the current plants out and the ground reworked.

Creamy Cucumber Salad


Our one cucumber vine is producing very well and today I picked eight cucumbers. So for dinner this evening I made this yummy Creamy Cucumber Salad. It was delicious so I thought I would share the recipe.

6 - 8 cucumbers, thinly sliced
1 onion, thinly sliced
1 cup mayonnaise
1/4 cup vinegar
2 teaspoons sugar
1 teaspoon dried parsley flakes
1 teaspoon salt
1 teaspoon dried dill weed
1/4 teaspoon pepper
1/4 teaspoon garlic salt
2 drops hot pepper sauce

Combine cucumbers and onions in a large bowl. Combine all remaining ingredients; pour over cucumber mixture and mix well. Refrigerate for several hours before serving

Reorganized Shelves

Here are some rather embarressing pictures of the state my bathrooom cabinets had gotten into. Since both Michael and I usually get ready for the day downstairs, but our bedrooms are upstairs, the clothes we wear most are stored in the downstairs bathroom cabinet. With warm weather, the summer clothes had been brought out but the winter clothes had not yet been put away. So the shelves were way overloaded and everything was hard to find, leading to a big disorganized mess. And the other shelves weren't any better.



When I started cleaning I found this creature perched on a towel. Ick!


I went through everything, putting away winter clothes, throwing away worn out clothes and refolding and putting away the rest. Other things, like paper towels and bathroom tissue I took out of the packages and stacked neatly. It's still not perfect but it's much better and it's good enough for me.

Slow Cooker Taco Chicken and Veggies

1 onion, chopped
1 (16 ounce) can chili beans
1 (16 ounce) can black beans
1 (15 ounce) whole kernal corn, drained
2 (10 ounce) cans diced tomatoes
1 (1.25 ounce) package taco seasoning
5 whole skinless, boneless chicken breasts
salt and pepper to taste
shredded Cheddar cheese

Put the onion, chili beans, black beans, corn, and diced tomaotes in the slow cooker. Add and mix the taco seasoning. Add salt and pepper to taste if desired.  Put chicken breasts on top of vegetable mixture. Cover and cook on low heat for five hours.

Remove chicken breasts from slow cooker and shred. Return shredded meat to slow cooker, mixing with the vegetables. Cover and cook for another hour or until ready to serve. Serve topped with Cheddar cheese (optional).

One Thing

Some days I wake up in the morning ready to dive in and get my work done. These are the days when everything seems to flow smoothly and everything on my list gets done and there's time to spare. Other days (way more than I'd like) I struggle to wrap my mind around everything that needs to be done and how to get it done in a timely fashion. Even with a plan or a to-do list somehow things just don't seem to come together.

This morning was one of the second type of mornings. I knew what needed to be done, but couldn't seem to pull my thoughts together around the interruptions from the kids, to actually get it done. So I employed one of my fall-back methods for getting started. It's a simple one, but it usually works for me. It's just this -

Do one thing. The first thing I see that needs to be done. It doesn't have to be the most important thing, just something to get me started. Somehow the simple act of doing one simple thing seemed to flip a switch in by brain get me started moving forward.

This morning's one thing was to put a pair ot tennis shoes that desperately needed washing (don't ask) in the washer. From there I moved on to loading and starting the dishwasher . . .


. . . and then to folding and putting away the clean laundry waiting in the laundry room.



By lunch time I also had a second load of laundry started, one of my kitchen counters cleaned off and wiped down and some other misellaneous clutter cleared away, as I moved through my mornig with the kids.

But I had to start with one little, seemingly insignificant step.

Interestingly this seems to work in other areas of life as well. When I feel completely stuck and am having a hard time deciding where to start, stop thinking and do the first thing in front of me. The rest will come after the first little forward momentum.
