Slow Cooker Pork Chops and More

ON MY MIND

I love the quote from John Greenleaf Whittier. It's been such a comfort to me, especially recently, to know that God's got this. No matter what happens it is no surprise to God, it was allowed by Him, and He has a reason, a divine purpose, and it is always for good.

IN THE KITCHEN


We had these yummy pork chops for dinner Tuesday evening. 

Slow Cooker Pork Chops

2 cups chicken broth
1 can cream of mushroom soup
3 tablespoons butter
1 onion, finely chopped
1 1/2 teaspoon paprika
1 1/2 teaspoon garlic powder
1 1/2 teaspoon poultry seasoning
1 teaspoon oregano
1 teaspoon dried basil
Salt and pepper to taste

Saute chopped onion in 3 tablespoons butter.
 In slow cooker mix together chicken broth, cream of mushroom soup and seasonings. Add sauted onions and pork chops. 


OUT AND ABOUT

Michael and I went to the feed store yesterday to get feed for the pig, chickens, rabbits and cats. 

Wednesday afternoon Michael and I were at my sister's house for several hours. I watched kids so she could do some things. 

Wednesday evening Austin and Amanda went to a church youth activity and I had choir practice.

Ryan was trying so hard to make a basket! Austin lowered the basket as far as he could but it was still too high. Ryan made a determined effort though and was so cute in the process!


Yesterday was the first day of school for public schools in our area. The kids were excited and ready to go

An Evening in the Mountains, Green Beans and Kittens

ANIMAL UPDATES

All six kittens are now living together in the woodpile and both mamma cats take care of them all. The kittens are getting playful now and the kids love playing with them. Five of the kittens have ribbons because they look almost identical and Amanda wanted to be able to tell them apart. She keeps check on them to make sure they aren't getting too tight as they grow.



YARD AND GARDEN

I picked a four gallon bucket full of green beans today and that is only a small part of what's in the garden. I cleaned and snapped them this evening and will process them tomorrow as well as pick more. 


This tree in our back yard is LOADED with little apples this year. Last year there were hardly any. 




OUT AND ABOUT

Yesterday after church, lunch, and naps for the little ones, we went up on the mountain with my sister and her kids and my cousin. Doug and Austin grilled hotdogs and we also had chips, several kinds of fruit, cookies and drinks. It was such a fun evening. 








This evening in the mountains was such a refreshing way to end the weekend and head into a new week.

Canning Chicken Stock, Smart Cat and More

ANIMAL UPDATES

Look at Amanda's smart cat (named Puppy) helping me make the weekly menu and grocery list. I had to say to his suggestions of fried mouse and roast rat though. I just don't think the people in this house would enjoy that.


YARD AND GARDEN

The garden is still doing wonderful. However the rain is keeping us from getting into it and doing what we need to do. The weeds are getting away from us and the beans need to be picked. I did some greens and Austin helped me with turnips and with pulling some of the weeds. 


WORKING, LEARNING, AND PLAYING TOGETHER

This swingset is swingless at the moment so the kids use it as monkey bars instead. Michael sometimes struggles to keep up with the others but he is determined to learn and keeps trying. He's even had blisters on his hands from trying so hard and has made a lot of progress. 




IN THE KITCHEN

I canned one quart and five pints of chicken stock this evening. I made this from the scraps of some chicken leg quarters I had cooked and taken the meat off of for a casserole. I use this to make soups, stews, gravy and homemade cream of chicken soup


OUT AND ABOUT

Our errand day run was short today. The kids didn't have very many stops they wanted to make and Michael found what he wanted at Goodwill pretty quickly. It was nice for a change.

WORKING, LEARNING, AND PLAYING TOGETHER

The kids had another "concert" on the porch this afternoon. Most of Madalynn's portion of the concert was sung to the cat who was trying to take a nap in the chair. 




Yesterday we had a birthday party for my two younger brothers. Now they are 13 and 14 - both officially teenagers!





OUT AND ABOUT

Also yesterday we went to McCormick's Farm with my sister and her kids. It's one of our favorite ways to spend a relaxing Sunday afternoon. The kids discovered if they put their fingertips in the water the fish would come nibble on them. They also enjoyed climbing on the rocks and watching the duck and geese. 






This morning Michael had a dentist appointment. After that we finished up the grocery shopping we didn't get to finish Saturday because the store we wanted to go to was closing early for Independence Day.

YARD AND GARDEN

The garden is so wet from all the rain we've had the last few days that I haven't worked in it much. it's growing like crazy though. Pictured below are pumpkin and squash (I think), onions, potatoes, green beans, lettuce, tomatoes, grapes and tomatilloes.


WORKING, LEARNING, AND PLAYING TOGETHER

Friday was another quiet day. It's gray and rainy and the kids were content to play on their tablets or watch movies. My eyes and head have been hurting so much I really haven't pushed them to do much else. Hopefully we'll get back into a better structure next week. 

Today we were busier. Doug bought Michael a new microphone that he could use with the stand Michael bought at Goodwill today. The kids set up a bunch of "musical equipment" and put on a concert. They even put out chairs and a sign by the road in hopes of having someone come listen to them.






Doug was out at the garage most of the day working on various projects. Here was working on a chainsaw. Later today he was working on a vehicle for his cousin. 


This evening we're hanging out in our own yard and watching fireworks set off in the neighborhood. We can usually see quite a few from where we are. 

OUT AND ABOUT

This afternoon the kids and I ran errands. We went to two pet stores, Michael's Craft Store, Goodwill, Food Lion (twice), McDonalds, and Family Dollar.
