Applesauce Bran Muffins

 Michael, CJ and I made these muffins for breakfast one evening for breakfast the next morning. I've never made bran muffins before and really didn't have high expectations for these, but I thought they turned out really good. Even my picky eaters took seconds so I'm counting them a success.

My photos aren't great because of the lighting in the kitchen but here are Michael and CJ enjoying mixing these up.





1 1/2 cups wheat bran
1 cup half and half
1/3 cup cinnamon applesauce
1 egg
2/3 cup brown sugar
1/2 teaspoon vanilla extract
1 cup all purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt

Preheat oven to 375 degrees F.  Grease muffin cups or line with paper muffin liners.

Mix together wheat bran and half and half. Let stand for 10 minutes.

Beat together applesauce, egg, brown sugar and vanilla. Add to bran mixture.

Mix together flour, baking soda, baking powder and salt. Stir flour mixture into bran mixture until just blended.

Spoon batter into prepared muffin tins.

Bake for 15 -20 minutes or until toothpick inserted into the center of a muffin comes out clean.
