Slow Cooker Taco Chicken and Veggies

1 onion, chopped
1 (16 ounce) can chili beans
1 (16 ounce) can black beans
1 (15 ounce) whole kernal corn, drained
2 (10 ounce) cans diced tomatoes
1 (1.25 ounce) package taco seasoning
5 whole skinless, boneless chicken breasts
salt and pepper to taste
shredded Cheddar cheese

Put the onion, chili beans, black beans, corn, and diced tomaotes in the slow cooker. Add and mix the taco seasoning. Add salt and pepper to taste if desired.  Put chicken breasts on top of vegetable mixture. Cover and cook on low heat for five hours.

Remove chicken breasts from slow cooker and shred. Return shredded meat to slow cooker, mixing with the vegetables. Cover and cook for another hour or until ready to serve. Serve topped with Cheddar cheese (optional).
